PREMIUS is the prestige cuvée from Yvon Mau makers of fine Bordeaux wines since 1897. The grapes, picked at perfect maturity, are de-stemmed and lightly crushed. The maceration, which lasts between 15 days and 3 weeks, is done by controlling the temperatures. The draining is decided when the balance of the wine is achieved: nice fruit flavours wrapped into sweet tannins. The wine is then matured in oak barrels for 6 to 12 months.
