Yvon Mau Cabernet Sauvignon

The Aude hillsides, which are the origins of Yvon Mau Cabernet Sauvignon, are exposed to the hot, dry Mediterranean climate and produce wines rich in fruit and flavour. Vinification takes place in temperature-controlled vats. After a short, pre-fermentation, maceration, the fermentation takes place a very quickly (over 4 or 5 days), and the wines are then immediately run off. This technique enables the richness and generosity of the Cabernet grapes to be fully expressed.
